Hamazushi Offers Customers Food that Past the Expiration Date - at a Store in Fukushima Prefecture

回転ずしチェーン大手の「はま寿司」は、福島県にある店舗で、社内で定めた「使用期限」を過ぎた食材を客に提供していたと発表しました。

発表によりますと、福島県郡山市にある「はま寿司 郡山堤店」で、社内で定めた「使用期限」が過ぎた食材で、変色などの劣化が確認されなかったものについて、期限を示すシールを貼り替えるなどして、食材として使っていたということです。

会社では、使用期限を過ぎた食材は廃棄するよう指示していましたが、調査に対して、一部の従業員は「多少の超過なら安全上も問題ない」とか「食品ロスを削減したかった」と答えているということです。

会社では、この問題による健康被害は確認されていないとしていて、今後、社員教育を強化したり、人の手に頼らない食材管理の方法を検討したりして、再発防止に取り組むとしています。

はま寿司は「今回のルールの不徹底は店舗の責任ではなく、会社の運営そのものにも問題があると受け止めています。真摯（しんし）に反省し、改善策を講じていきます」とコメントしています。

While the company had instructed to dispose of foodstuffs that had passed the expiration date, in response to the survey, some employees answered that, ``If there is a slight excess in the expiration date, there is no problem with safety,'' or ``I want to reduce food loss.”

The company did not confirm if there were any health issues due to this problem, it would work to prevent recurrence by strengthening employee education, and consider using food management method that might not rely on human hands.

Hamazushi commented that "This failure to follow the rules is not the store's responsibility, we admit that the company's management itself is the problem. We will sincerely reflect and take measures to improve."
